- Diced andouille sausage 1 cup
- Cooked chicken, shredded 1 cup
- Finely chopped 1 onion
- Diced 1 bell pepper
- 2 cloves garlic
- Diced tomatoes 1 cup
- Chicken broth 2 cups
- Pasta 8 oz
- Cajun seasoning 2 tablespoons
- Thyme 1 teaspoon
- Paprika 1 teaspoon
- Salt and pepper to taste
Step 1: First in a medium pot, heat oil over medium heat. Then add the diced sausage and cook until these browned. And remove the sausage from the pot and set it aside.
Step 2: In the same pot, sauté the bell pepper, onion, and garlic until softened and fragrant. Stir together in the diced tomatoes, thyme, Cajun seasoning, and paprika.
Step 3: Now add the chicken broth and pasta bring to a boil. Then reduce heat to low, cover, and simmer for at last 20 minutes, or until the pasta is cooked through. Then drain the pasta and add it to the pot with the sauce.
Step 4: Stir in the shredded chicken and sausage and season with pepper and salt to taste. Garnish with chopped parsley and serve hot.
