- 5 lbs of (2.27 kg) Jimmy Red corn
- 8 lbs of (3.63 kg) sugar
- 2 mason jars (1-gallon capacity each)
- 1 cinnamon stick
- 2 vanilla beans
- 5 gallons (19 liters) water
- 1 packet moonshine yeast
Thoroughly clean and wash the Jimmy Red corn to remove any impurities.
In a large or medium pot, you combine the corn and water. Now you bring to a boil, then reduce heat and let it simmer for thirty minutes.
Remove from heat and let the corn mixture cool toroom temperature.
Once these cooled, then you add the sugar andstir until completely dissolved.
Transfer the mixture to the jars, then leavingsome space at the top.
Crumble the moonshine yeast packet and add it tothe jars. Stir gently.
Drop a cinnamon stick and a split vanilla bean into each jar for added flavor.
Seal the jars tightly and store them in a cool,dark place for 10-14 days to ferment.
