Ingredients
  

  • 4 large russet potatoes

  • 2 tablespoons Dijon mustard

  • 1 tablespoon apple cider vinegar

  • 1 cup mayonnaise

  • 2 celery stalks, diced

  • 1 small red onion

  • 1/4 cup of fresh parsley

  • 1/2 cup dill pickles

  • Salt and pepper

Instructions
 

  • Start by washing the potatoes thoroughly. Then you peel and dice them into bite sized pieces.
  • In a large bowl. You bring water to a boil and add the diced potatoes. . And cook until they are soft.
  • While the potatoes cook, prepare the dressing. Now in a bowl, mix the Dijon mustard, mayonnaise, vinegar, chopped red onion, apple cider, and celery.
  • Once the potatoes are ready then drain them and let these cool for a few minutes.
  • Add the warm potatoes to the dressing and gently mix until they are evenly coated.
  • Now toss in the chopped fresh parsley and dill pickles and season with salt and pepper to taste.
  • Now cover the bowl and refrigerate the potato salad for at least two hours to allow the flavors to meld.
