- 4 large russet potatoes
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 cup mayonnaise
- 2 celery stalks, diced
- 1 small red onion
- 1/4 cup of fresh parsley
- 1/2 cup dill pickles
- Salt and pepper
Start by washing the potatoes thoroughly. Then you peel and dice them into bite sized pieces.
In a large bowl. You bring water to a boil and add the diced potatoes. . And cook until they are soft.
While the potatoes cook, prepare the dressing. Now in a bowl, mix the Dijon mustard, mayonnaise, vinegar, chopped red onion, apple cider, and celery.
Once the potatoes are ready then drain them and let these cool for a few minutes.
Add the warm potatoes to the dressing and gently mix until they are evenly coated.
Now toss in the chopped fresh parsley and dill pickles and season with salt and pepper to taste.
Now cover the bowl and refrigerate the potato salad for at least two hours to allow the flavors to meld.
