Ingredients
  

  • 8 ripe tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 onion
  • 1/2 cup fresh basil leaves
  • 2 cloves of garlic
  • 1 cup vegetable broth
  • 1/2 teaspoon of black pepper
  • 1/2 cup heavy cream

Instructions
 

  • Start by scoring the tomatoes and blanching the min boiling water for 1 minute. Then, peel off the skin and dice them.
  • In a large or medium pot, sauté the diced onionand garlic in olive oil until translucent.
  • Now add the diced salt, tomatoes, and pepper.Cook for 10 minutes until the tomatoes break down.
  • Now pour in the vegetable broth then you bringthe mixture to a boil. Now reduce the heat, and you simmer for these about 20minutes.
  • Remove from heat, add fresh basil leaves, and usean immersion blender to blend until smooth.
  • Return the soup to low heat and stir in the heavycream. Simmer for an additional 5 minutes.
