- 8 ripe tomatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 onion
- 1/2 cup fresh basil leaves
- 2 cloves of garlic
- 1 cup vegetable broth
- 1/2 teaspoon of black pepper
- 1/2 cup heavy cream
Start by scoring the tomatoes and blanching the min boiling water for 1 minute. Then, peel off the skin and dice them.
In a large or medium pot, sauté the diced onionand garlic in olive oil until translucent.
Now add the diced salt, tomatoes, and pepper.Cook for 10 minutes until the tomatoes break down.
Now pour in the vegetable broth then you bringthe mixture to a boil. Now reduce the heat, and you simmer for these about 20minutes.
Remove from heat, add fresh basil leaves, and usean immersion blender to blend until smooth.
Return the soup to low heat and stir in the heavycream. Simmer for an additional 5 minutes.
