Ingredients
  

  • 1 lb boneless chicken thighs or beef
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 sliced red bell pepper
  • 1 sliced green bell pepper
  • 1 large finely chopped onion
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 1 teaspoon dried oregano
  • 1 tablespoon chili powder
  • 2 cups chicken broth
  • 1 cup beef broth
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a large cazuela over mediumheat. Add the diced chicken and pork, and cook until browned. Remove from thecazuela and set aside.
  • In the same cazuela, sauté the chopped onion andminced garlic until fragrant and translucent.
  • Stir in the diced tomatoes and sliced bellpeppers, cooking until they soften.
  • Return the browned chicken and beef to thecazuela, and mix in chili powder, ground cumin, dried oregano, salt, andpepper.
  • Pour in the chicken and beef broth, bringing themixture to a simmer. Cover the cazuela and let it cook for about 30 minutes,allowing the flavors to meld.
