Ingredients
  

  • Fresh collard greens, 2 pounds washed and chopped
  • Distilled vinegar 1 cup 
  • Water 1 cup 
  • Canning salt 1/4 cup 
  • Garlic minced 3 cloves 
  • Red pepper flakes 1 teaspoon 

Instructions
 

  • Step 1: Wash collard greens thoroughly and cut and remove tough stems. Then blanch greens for 2 minutes.
  • Step 2: Now prepare a brine with vinegar, water, and canning salt. Now pack collard greens into sterilized jars. Then you add garlic and crushed red pepper for flavor.
  • Step 3: Now pour hot brine over greens, leaving a one inch headspace of the canning jars.
  • Step 4: Process the jars in a boiling water canner for 15 minutes. Then remove the jars and let them cool on a clean kitchen towel. Check the seals, and ensure the lids have popped down. Now store them in a cool, dark place.
