- 2-3 IB Beef Knuckle
- 2 Tablespoons Olive Oil
- 1 Onion, Chopped
- 2 Cloves Garlic, Minced
- 2 Carrots, Chopped
- 2 Celery Stalks, Chopped
- 1/2 Cup Red Wine
- 6 Cups Beef Broth
- 1 Sprig of Fresh Thyme
- 1 Bay Leaf
- Salt and Pepper, to Taste
Make a knuckle seasoning with salt, pepper, garlic, and rosemary. Heat olive oil in a roasting pan on medium heat.
Now, in a pan, fry the onion, garlic, and carrots for 5 minutes before adding the red wine and stirring until it turns brown.
Add bay leaves and thyme to the beef broth and cover with a lid. Cook in the preheated oven for 3 hours until the meat is tender.
Remove from oven, let cool for 15 minutes, and serve with fried shallots and rice.
