Ingredients
  

  • 2-3 IB Beef Knuckle
  • 2 Tablespoons Olive Oil
  • 1 Onion, Chopped
  • 2 Cloves Garlic, Minced
  • 2 Carrots, Chopped
  • 2 Celery Stalks, Chopped
  • 1/2 Cup Red Wine
  • 6 Cups Beef Broth
  • 1 Sprig of Fresh Thyme
  • 1 Bay Leaf
  • Salt and Pepper, to Taste

Instructions
 

  • Make a knuckle seasoning with salt, pepper, garlic, and rosemary. Heat olive oil in a roasting pan on medium heat.
  • Now, in a pan, fry the onion, garlic, and carrots for 5 minutes before adding the red wine and stirring until it turns brown.
  • Add bay leaves and thyme to the beef broth and cover with a lid. Cook in the preheated oven for 3 hours until the meat is tender.
  • Remove from oven, let cool for 15 minutes, and serve with fried shallots and rice.
